A bunka is the Japanese general purpose chef's knife that many cooks today have added to their kitchen favorites. A knife of many talents, a bunka easily handles all the basic kitchen cutting tasks. In fact, some people even prefer it to a chef’s knife. Slightly shorter than the standard chef's knife, the bunka is light, agile, and very easy to maneuver. There's just enough belly curve to enable rocking cuts, which just adds to the bunka's versatility.
The blade is hand ground Bohler N690 and features a hand rubbed satin finish. It takes an incredibly sharp edge and holds onto it. Increased toughness gives it better resistance to edge chipping. Dave's touchmark is on the left side of the blade. The K-tip provides a detail-oriented tip.
Like the blade, the handle is inspired by Japanese knives. The octagonal shape is extremely comfortable. Presentation grade South African curly sneezewood (Ptaeroxylon obliquum) is exceptionally beautiful. This rare wood is strong and dimensionally stable with changes in humidity -- a perfect choice for a knife that will be used in the kitchen. The front of the handle is sealed with a nickel silver spacer, followed by black G10.
