Description: Pieter van der Bank of PVB Knives is a bladesmith from the small town of Heidelberg located in the Western Cape of South Africa. Pieter has been hand crafting unique kitchen knives since 2016 and focuses on both European style and Japanese style chef's knives. His fit and finish is excellent and his understanding of chef knife geometry is equally well thought through.
A utility knife is between a chef’s knife and a paring knife, with a narrower and straighter blade. This makes it perfect for a multitude of small tasks where more precise cuts are needed, such as trimming broccoli, green beans, or other smaller vegetables. Some cooks like to use it in their hand, too—almost like a large paring knife. Others like its smaller size as an alternative to the chef’s knife. Utility knives are sometimes called sandwich knives because they work well on almost everything that goes into a sandwich—from thin-skinned vegetables such as tomatoes, to meats and cheeses.
The san mai blade combines a 1070 carbon steel core with 75Ni8 sides, ensuring a keen, long lasting edge with chip resistance. The flat ground blade features a 15 degree angle for high performance cuts with less wedging. Pieter's mark is on the right side of the blade. We recommend using camellia oil to protect the carbon steel blade and natural wood handle.
The handle combines wenge and dyed birdseye maple into a Japanese-inspired octagonal handle. This ambidextrous handle is very comfortable and nicely accommodates a pinch grip. Like other knives, this knife should not be put in the dishwasher.
This utility knife is accompanied by a hand stiched leather sheath to protect the blade while being transported.
