Description: Pieter van der Bank of PVB Knives is a bladesmith from the small town of Heidelberg located in the Western Cape of South Africa. Pieter has been hand crafting unique kitchen knives since 2016 and focuses on both European style and Japanese style chef's knives. His fit and finish is excellent and his understanding of chef knife geometry is equally well thought through.
Like other chef's knife, the nakiri is a multipurpose knife. It is a traditional Japanese knife ideal for chopping fruits and vegetables. The edge is double beveled, like a Western knife. Though sometimes called a vegetable cleaver, the thin edge geometry makes it a precision tool, rather than a Japanese equivalent to meat cleavers. Nakiri make fast, accurate work of thin slicing and chopping.
The hand forged san mai blade combines a high performing 1070 carbon steel core with 75Ni8 carbon steel sides. The spine and choil are nicely rounded for comfort. Unlike most nakiri, the front of this one is fully sharpened. This allows you to have a flat profile for chopping tasks, but still have a sharp tip for lighter detail work. Pieter's mark is on the right side of the blade. Because the knife is forged from carbon steels, we recommend using camellia oil to oil the blade and natural wood handle.
The Japanese-inspired, ambidextrous oval handle combines mopane with a masur birch spacer. The contoured handle fills your hand and accommodates a comfortable pinch grip. Like other knives, this knife should not be put in the dishwasher.
