Description: Pieter van der Bank of PVB Knives is a bladesmith from the small town of Heidelberg located in the Western Cape of South Africa. Pieter has been hand crafting unique kitchen knives since 2016 and focuses on both European style and Japanese style chef knives. His fit and finish and his understanding of chef knife geometry is superb.
The blade is hand forged 52100 carbon steel. 52100 is considered by many knife makers and knife users to be among the highest performing steel used to make knives today. Because this knife is made from carbon steel, we recommend using camellia oil to prevent rust. The spine features a forge finish moving into a hand rubbed satin finish. The flat ground blade features a 15 degree angle for a high performance cut with little wedging.
The handle is contoured from a beautiful selection of stabilized mango wood. By using stabilized wood, Pieter ensures a handle that will hold up well to the harsh demands of a professional kitchen. The handle swells at the palm to ensure a comfortable grip. It is finished with a polished brass bolster, ensuring water can not get into the handle.
