Paring knives are a must-have for every kitchen. You can think of it as the mini version of the chef's knife because, like the chef's knife, the paring knife is quite versatile. The paring knife gets its name from its main function—removing or “paring” away things like peels or pits from fruits and vegetables. It’s ideal for peeling, coring, trimming, decorating, and other detail work. Its small size gives you complete control over the tip and edge of the blade. Generally, you'll use this knife in your hand rather than against a cutting board, though paring knives can also be used for chopping small foods, such as garlic cloves or ginger.
The blade is forged from Sam's own twist pattern damascus combining 1084, 1070, and 15N20 carbon steels to ensure excellent edge holding and chip resistance. The blade is ground extremely thin for high performance cuts and detail work. The spine and choil have been rounded for comfort.
The ambidextrous Japanese-inspired handle is a style called a half-octagonal. The faceted top is matched with a rounded base for comfort. The bolster and handle are Arizona desert ironwood (olneya tesota). A G-10 spacer assists the handle to adjust to temperature and humidity changes. The handle is comfortable in both a pinch grip and a full handle grip. Like other knives, this knife should not go in the dishwasher.
