Description: Mastersmith Steve Koster has been making knives for almost 50 years. He has won numerous awards through the years for his handmade, one-of-a-kind knives. Steve grew up in Sandpoint, Idaho where he spent most of his time fishing, hunting, camping, trapping, and climbing. He began knifemaking in the early 70's and started forging knives in 1986. He joined the American Bladesmith Society in 1999 and passed his journeyman test in 2003. Koster was awarded his Mastersmith rating on April 11th, 2021. While often seen making beautiful bowie knives, fighters, and hunters, Steve's chef's knives are equally exceptional!
The santoku is a multipurpose knife used for just about every cutting job in the kitchen. The name means “three virtues.” Depending on who you ask, this refers either to the three types of foods it works especially well with — vegetables, proteins, and fruit, or for the three types of cuts at which it excels: slicing, dicing, and chopping. Slightly shorter than the European chef's knife, a santoku is very easy to maneuver—even in a smaller kitchen. There's plenty belly curve to enable rocking cuts, which enhances the knife's versatility. Whether slicing, chopping, mincing, or dicing, this comfortable knife will do it all.
The blade is CTS-XHP stainless steel with an heirloom quality hand rubbed satin finish. This US-made steel is an air hardening, high carbon, high chromium, corrosion resistant alloy. CTS-XHP offers excellent edge retention and great corrosion resistance, creating an easy to maintain knife with great performance. The spine and choil are nicely rounded for comfort.
The Japanese-inspired octagonal handle is stabilized curly maple. A large natural G-10 spacer is surrounded by alternating copper and black G-10 spacers. The handle is finished with a black G-10 ferrule. This is a knife is perfectly balanced. You won't want to put down!
