Description: Journeyman Smith Erik Fritz has been working on chef's knife the last couple years and his latest knives have been amazing!
This high performance chef's knife is a perfect choice as a primary knife in the kitchen. The long, deep-bellied blade is well suited for slicing vegetables and meats. The gentle arch of the cutting edge is perfect for a rocking chopping motion with plenty of finger clearance over a cutting board.
The 8.4 inch, damascus san mai blade was hand forged. An SG-2 powdered metallurgical stainless steel core is surrounded by alternating layers of nickel and stainless steel. SG2 is a super-steel created by Takefu in Japan. It ensures exceptional edge holding with a keen, superior edge. A deep etch helps food slice away from the side of the knife. It is nicely distal tapered for optimal balance.
African blackwood handle scales are set on the full tang for strength and durability. The scales meet seamlessly with 416 stainless steel bolsters. The handle is beautifully shaped with and feels exceptionally comfortable. It is sure to be a kitchen favorite.
