Description: This exceptional fillet knife is the work of Argentinian knifemaker Pablo Untroib. Pablo lives in Buenos Aires. He specializes in knives for professional and amateur cooks as well as making outdoor knives.
This high performance fillet knife is sure to become a 'goto' knife -- both in the kitchen and when out fishing. This beautiful knife is the right tool for two key tasks — boning and filleting. When boning, the narrow, sharp blade gets in close to the bone, making it easy to separate meat from bone. The extremely sharp edge even cuts through fibrous material with ease. It’s perfect for trimming the silverskin from a tenderloin or even making your own cutlets. The narrow blade reduces drag as you cut against the meat, so cutting is fast and easy. When it comes to filleting fish, the blade's 11 inch length is just right to glide through the body of the fish, quickly removing bones and skin. The semi-firm knife has a slight flex making filleting a breeze.
The blade is O2 carbon steel. At Hrc 60, it will have a keen, long lasting edge. An elegant forced patina provides limited rust resistance and helps you get comfortable working with carbon steels. Because this knife is made from carbon steel, we recommend camellia oil to avoid rust and oxidation.
Jacaranda (Jacaranda mimosifolia) wood handle scales are set on the integral full tang for strength and durability. They are seated with three hidden bolt rivets. The domed handle is nicely contoured so that it fits most hands.
The knife is accompanied by a black leather sheath to keep the knife safe during transportation.
