Description: This exceptional Scimitar Breaking is the work of Argentinian knifemaker Pablo Untroib. Pablo lives in Buenos Aires. He specializes in knives for professional and amateur cooks as well as making outdoor knives.
The Upswept Boning/Fillet Knife is the perfect companion whether filleting some freshly caught fish, slicing up rib cutlets into steaks, or even deboning a chicken or pork. The blade is still tall enough to be able to be used over a cutting board for general tasks or slicing meat against a fork. This is a must-have knife for any serious kitchen!
The blade is O2 carbon steel. At Hrc 60, it will have a keen, long lasting edge. An elegant forced patina provides limited rust resistance and helps you get comfortable working with carbon steels. Because this knife is made from carbon steel, we recommend camellia oil to avoid rust and oxidation.
Incense wood handle scales are set on the full tang for strength and durability. They are seated with three hidden bolt rivets. The wood is light toned with an interlocking figure. The domed handle is nicely contoured so that it fits most hands.
The knife is accompanied by a veg tanned leather sheath. This well balanced breaking knife can be used for hours without fatigue. It is a perfect choice for both home and commercial chefs - as well as fisherman.
