Description: Swedish knifemaker Greger Forselius has a flair for design and a passion for making knives.
The gokujo boning/fillet knife is perfect for deboning meat and removing bones from fish. Its slender, upswept blade will be great for filleting or removing silver skin from the meat. The upswept blade (like a samurai sword) enhances the ease of a single pass cut to remove flesh from the bone. It is a strong and sturdy knife, used to cut meat away from the bone, but not for cutting through bones.
The blade is damascus forged from carbon steels by Randy Haas. The blade shows off the bold damascus pattern. Forselius designed this high performance knife to be tremendously light and nimble.
Handle scales are hand contoured dyed and stabilized chestnut burl, set on white G-10 spacers. Brass and stainless Loveless style fasteners set the handle in place. By using stabilized wood, Forselius ensures the knife will hold up well to the high demands of either a home or commercial kitchen -- or even used out in the field.
