Description: Whether in the kitchen or out in the field, this boning/fillet knife is perfect for deboning meat and removing bones from fish. Its slender, upswept blade will be great for filleting or removing silver skin from the meat. The upswept blade (like a samurai sword) enhances the ease of a single pass cut to remove flesh from the bone. It is a strong and sturdy knife, used to cut meat away from the bone, but not for cutting through bones.
Journeyman Smith Jarrett Cieslak is an exceptional young bladesmith that is clearly a maker to watch. We anticipate that he will become 'one of the greats'.
At 15 years old, back in 2013, Jarrett began making knives after encountering blacksmithing videos on YouTube. He was immediately hooked. Between 2014 and 2016, he received a machining certificate from Harford Community College and was awarded welding certifications from Earlbeck Welding. This continuing education (along with hours and hours of hammering) gave him an understanding of how he could merge these experiences with his blacksmithing. In 2018, he attended an ABANA conference in Richmond, VA, where he was encouraged to join the American Bladesmith Society. Jarrett takes great pride in his craft, from forging the steel, to fit and finish, to personally hand stitching every sheath. His artistry stems from the love of transforming raw materials into a high performance knife that is sure to be passed down through generations.
The blade is hand forged 52100 carbon steel, ensuring a keen, long lasting edge. 52100 is considered by many makers and knife users to be among the highest performing steels used in modern knives. The grinds are well performed and nicely balanced from side to side. Cieslak' s makers mark (a stylized beard) and J.S. are set on the right side of the ricasso.
The handle is stabilized macadamia wood. It is contoured to lock your fingers securely between the beak and guard - yet provides a range of comfortable grips for extended use. The handle is fit perfectly to a fluted stainless steel guard.
To keep the knife close at hand, a leather custom sheath is included.
