Description: Sujihiki are slicers or carving knives that are well suited for slicing steaks due to the extra long blade. Extremely sharp, they are also well suited for preparing sushi and sashimi.
The maker of these superior quality knives starts with limited production powdered metallurgical (PM) molybdenum/vanadium alloy tool steel and hand forges this to shape. A special-alloy high carbon steel powder is then forge bonded to each surface of the blade. Finally, this core material is forge-welded between two layers of #18 chrome stainless steel and tempered to Rc 63 (very hard!). Following in the best tradition of knife making, a steel ferrule is forge-welded to the tang to ensure that food particles cannot become lodged between the tang and the handle. A distal taper to the tang and blade assures the best possible balance and performance. The handle, made from multiple layers of wood impregnated with resin, is riveted to the full length tang and will last a lifetime. The blades are fully honed. Accompanied by traditional lacquered wooden sheath (saya).
