Description: The nakiri is a traditional Japanese knife shape ideal for chopping fruit and vegetables as well as thin slicing of meats (with no bones). The edge is double beveled, like a Western knife. Though sometimes called a vegetable cleaver, the thin edge geometry makes it a precision tool, rather than a Japanese equivalent to a meat cleaver.
This handmade nakiri by Kazuyuki Tanaka is among the finest cutlery ever made -- combining R2 powdered metallurgical (PM) steel with Tanaka's craftsmanship clearly makes his handmade knives one of our shop favorites.
Tanaka starts with ultra-modern, limited production, R2 PM stainless steel and forges this between layers of soft, supportive Damascus. The resulting edge is tempered to Rc 62 (very hard!) for exceptional edge holding, but is easy to sharpen.
A nickel silver bolster separates the blade from the desert ironwood handle. The handle is nicely carved for a very comfortable and secure grip. Mosaic pins complete the presentation. The blade is fully honed and extremely sharp.
