Description: The nakiri usuba is a traditional Japanese knife form ideal for chopping fruit and vegetables. The edge is double beveled, like a Western knife. Though sometimes called a vegetable cleaver, the thin edge geometry makes it a precision tool, rather than a Japanese equivalent to meat cleavers.
Handcrafted by expert artisans in Fukui-ken, Japan, Ran-Gan-Ryu knives combine elegance and functionality. A stainless steel VG-10 center core (Jigane) is clad with 63 layers of stainless steel. VG-10 "super steel" is composed of carbon, chromium, cobalt, manganese, molybdenum, silicon and vanadium, resulting in a long-lasting, high-performance edge with easy maintenance. The hand-hammered finish (known as 'tsuchime' in Japanese) lends not only to the beauty, but reduces knife-drag and prevents food from sticking to the blade. The ultra-thin cutting edge is exceptionally keen. RyuSen's heat treatment assures a long lasting edge. The premium Micarta handle nestles comfortably into the curves of the palm and allows for a variety of comfortable and secure grips. Micarta is among the most durable and beautiful materials used for chef's knife handles. It is perfect for both left and right-handed used. Hand wash recommended.
