Description: The gyuto is modeled after the French pattern chef's knife. Longer and slimmer than the santoku, it is a perfect general purpose chef's knife. The long blade is needed for the sawing motion required to cut meat and the slim profile keeps the weight low and the balance right.

The many layers of soft, resilient damascus surround a central SG-2 powdered metallurgical (PM) stainless steel core. Takefu SG-2 is considered by many knife aficionados to be among the highest performing steels used in modern knives. It can be sharpened to a razor edge -- ensuring a silky and effortless cut. Powder metallurgy improves the alloy significantly creating smaller crystalline size and an incredibly strong blade. It is hardened to Hrc 61-63 (very hard!). This gives the blade an exceedingly tough, long lasting and durable edge that is relatively easy to sharpen.
Following in the best tradition of knife making, a steel ferrule is forge-welded to the tang to ensure that food particles cannot become lodged between the tang and the handle. The triple-riveted tang runs the full length of the handle for strength and longevity. The central pin is a beautiful mosaic design that really helps the handle stand out. The nicely contoured, comfortable handle is made from black micarta. Micarta is a durable material that holds up exceptionally well to the rigorous demands of a home or commercial kitchen. Even when wet, micarta offers a less slippery surface than traditional wood handles.
